Sucralose

A Smart Sweetening Solution for Modern Formulations

Brief Introduction

Sucralose is a non-nutritive, zero-calorie high-intensity sweetener derived from sucrose. It is approximately 600 times sweeter than sugar and is not metabolized by the human body. As such, it does not raise blood insulin levels, promote tooth decay, or contribute to caloric intake.

Sucralose is suitable for people with diabetes, obesity, or cardiovascular conditions, making it one of the most widely used health-conscious sweeteners globally.

The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an acceptable daily intake (ADI) of 0–15 mg/kg body weight and classified sucralose as a “Generally Recognized As Safe (GRAS)” food additive of Class A.

Applications

Sucralose is commonly used in combination with other natural or artificial sweeteners such as aspartame and acesulfame potassium. It is widely applied in a variety of food and beverage products, including soft drinks, chewing gum, dairy products, preserved fruits, syrups, bread, pastries, ice cream, jams, jellies, puddings, flavored milk, sauces and condiments (such as vinegar, oyster sauce, soy sauce, and mustard), breakfast cereals, sweetened milk powder, candies, fruit spreads, heat-processed or dehydrated fruits, baked goods, fruit fillings, powdered drinks, concentrated fruit and vegetable juices, salad dressings, and more.

Sucralose is also used in health foods and pharmaceuticals, and in Western countries, it is extensively adopted in tabletop sweeteners.

With excellent solubility and high stability, sucralose delivers a clean, sugar-like sweetness. It helps mellow sour and salty flavors, masks bitterness, astringency, and alcoholic off-notes, and enhances spicy and creamy flavors. Due to its broad functionality, sucralose is widely applicable across numerous product categories.

The usage of sucralose in food should comply with the limits set forth in GB 2760 (Chinese National Food Safety Standard).
